Some days I find there simply aren’t enough hours in the day and sometimes I find myself wanting food that I can just grab and stuff in my face on the go. This is how this protein ball recipe was born. My last few recipes have all used Lupin flakes which can quite easily be used instead of flour in a number of recipes helping to make recipes more nutritious.
If you are like me and eat low carb meals the majority of the time, then this protein ball recipe can easily be adapted to be low carb by simply leaving out the goji berries.
Ingredients
120g Lupin flakes
120g Ground almond
1tsp vanilla essence
1 scoop Natural Body Nutrition Grass Fed vanilla whey protein
2 egg yolks
2 eggs whites
Pinch of salt
80g stevia sweetner
80g Goji berries (Optional)
2 limes
Macros per ball
This recipe makes approximately 10 protein balls

Fat – 9g
Carbohydrate – 9.2g with goji berries 4g without
Instructions
Preheat the oven to 180°C
Throw the Lupin flakes, ground almond, nbn vanilla whey protein, salt, lime zest and goji berries in a bowl and mix.
Now get the lime juice, vanilla essence, and egg yolks and add it to the lupin mixture and mix together.
Get the egg whites in a bowl and whisk together then add the stevia and keep whisking until it forms stiff peaks.
Now fold the egg whites into the lupin flake mix.
Roll the mixture into balls that are approximately the size of a golf ball.
Spread the balls out on a baking tray and pop them in the oven for 10 – 15 minutes.
